Why does raw apple make my mouth itch?

If your immune system already reacts to pollen, it can mistake the look-alike food protein for that pollen, causing itching or tingling in the mouth, lips, and throat.
This is the most common food allergy in adults, and it is badly under-recognized. Up to about 60 percent of people with birch-pollen allergy have some version of it. Most people never connect the dots. They notice their mouth itches after a raw pear and assume they are imagining it, or that the fruit was somehow off. Which foods cross-react with which pollens?

Is it dangerous?
